Like haggis, Stornoway Black Pudding is a U.K. favorite that contains sheep's lungs. This ingredient makes it illegal to import into the United States, despite it being a regular menu item across the pond.
What does black pudding taste like? Black pudding is a savory, dry, earthy, herby, nutty, and filling mashed blood sausage. Seasoning and spices can be added to give it a spicy taste. The pudding does not taste anything like blood.

Black pudding is made from animal blood. If that makes you squeamish, it's worth remembering that lots of processed meat is made from unorthodox parts of animals, although the dark colour of black pudding can make it particularly off-putting.
White Pudding is an Irish/Scottish/English sausage that consist mainly of fat, grains, flour, leeks, and milk. The recipe for this sausage varies depending on where you go. It can contain pork, pork trimmings, beef, or just fat as in this recipe. Even the grains can vary from oatmeal to pearl barley.
Our slices contain less than 3% fat and our rings less than 7%. Don't be fooled by all those specks of white you see in the pudding when you slice it open, most of those are grains of barley.
Black pudding, and other 'blood cakes' from around the world such as ti-hoeh-koe from Taiwan, are banned in US due to sanitary reasons.

White pudding is broadly similar to black pudding, but does not include blood. Modern recipes consist of suet or fat, oatmeal or barley, breadcrumbs and in some cases pork and pork liver, filled into a natural or cellulose sausage casing. Recipes in previous centuries included a wider range of ingredients.

You don't need to get it all the way under, but make sure it's under the yolk before you flip. Allow to cook for about another minute for over-easy, 2 minutes for over medium and so on. Flip once more and serve immediately. And there you have it.
