What do beignets taste like? Beignets are a donut, so they taste like a donut! But with a bit more yeast risen texture. The flavor on the inside is not as sweet as a traditional donut and they have larger holes in the center since they puff up more.
The ingredients in a beignet are slightly different from those in a traditional donut recipe, and that results in a distinct texture difference. Made with more yeast and fewer eggs than a typical donut recipe, beignets tend to be "a little more puffy with a soft middle," notes Alyssa Rivers in The Recipe Critic.
Beignets are a staple in New Orleans and are favored among visitors and locals alike. Essentially deep-fried pâte à choux — though it's most often referred to as a hole-less, square donut — the beignet works for any meal and any occasion.
In the United States, beignets have been popular within New Orleans Creole cuisine and may also be served as a dessert. They were brought to New Orleans in the 18th century by French colonists, from "the old mother country", also brought by Acadians, and became a large part of home-style Creole cooking.
To put it simply, beignets are square shaped pieces of dough that are deep fried and generously sprinkled with confectioners sugar. They're best served hot and are best paired with a cup of coffee, or café au lait!
Instead, get a hot beignet -- don't eat these things cold -- because the sugar will hold onto the surface of the beignet and will melt more quickly as you eat. Next, carefully lift the beignet to your mouth but do not breathe!

cottonseed oil
Your cooking oil should be at 370 degrees Fahrenheit. We use cottonseed oil at the Cafe Du Monde, and we recommend you use cottonseed oil. However you may use any vegetable oil you wish. Remember that the temperature of the oil will drop when you add the beignet dough to the oil.
Note: If your beignets fail to puff up and remain flat, this is an indication the frying oil temperature is too low to properly cook the dough. Try using smaller pieces of dough and let the fryer come back to temperature before cooking another batch.
Plan ahead, because this recipe needs to chill in the refrigerator overnight, or kept chilled up to 2 days. If you want same-day beignets, they must chill for 4 hours at the very least.
Traditional French beignets are part of the French choux pastry family, which are raised in steam and have a hollow center. This method gives French beignets a light and pillowy texture.
Sopaipilla, sopapilla, sopaipa, or cachanga are all terms used to describe a fried pastry (similar to a donut or beignet) and are popular in Hispanic culture particularly in New Mexico and South America.
If it's not too sticky to knead, knead it on a floured surface or with the dough hook; if it's still pretty sticky, add another 1/2 cup flour. Knead until it's smooth and elastic, yet still tacky.
To reheat beignets in the microwave, place them on a microwave-safe plate. For stale beignets, cover them with a damp paper towel. Heat the beignets for about 10 to 15 seconds until they're soft. Eat the beignets ASAP after reheating them because they will get hard as they cool.
Beignets are best served warm, or at least the same day. You can freeze them if you'd like, and coat them in icing sugar once you bring them out of the freezer and just before you serve them.

How to Reheat Beignets in the Microwave?
4 days
You can make the dough ahead of time and fry later when you're ready. Simply cover and store the dough after forming it in the fridge for up to 4 days.
These tasty treats can turn mushy and limp if they are reheated incorrectly, so they need to be reheated in the oven on a flat cookie sheet or placed on a rack in a slightly deeper pan. This dries the outside while they are heating and reactivates the oil without drying out the inside.
Make sure your oven is preheated to 450F. Wrap your funnel cake in paper-towel and put it in the microwave for 30 seconds. Place it in the middle rack of your oven for 1 minute. This should give you the perfect combination of soft warm inside and slightly crispy, caramelized outside.
