Of all the wonders of the modern American Chinese menu, crab rangoon is one of the strangest. It consists of cream cheese, sometimes sweetened, plus, usually, very small bits of imitation crab, stuffed into a wonton wrapper and deep-fried, served with a syrupy, neon sweet-and-sour dipping sauce.
The cream cheese wontons were usually labeled, “crab rangoon,” which is basically a cream cheese wonton with imitation crab added to the filling.
Crab Rangoon was on the menu of the "Polynesian-style" restaurant Trader Vic's in San Francisco since at least 1956. Although the appetizer is allegedly derived from an authentic Burmese recipe, the dish was probably invented in the United States by Joe Young working under Victor Bergeron, founder of Trader Vic's.
Although crab Rangoon can be found in almost all the Chinese restaurant in the United States, again, this dish has nothing to do with Chinese food. The word “Rangoon” in the name “crab Rangoon” is really an old name of Yangon, the largest in Myanmar.
What is crab rangoon really made of? Chowhound says that when it comes to crab rangoon, it's actually best to not use real crab because the rest of the ingredients would overwhelm the light flavor of real crab. When making crab rangoon, it's better to go with imitation crab — also known as surimi.
